Using milk and flour for thickening instead of just cream! If you cook the pasta then let it cool. It makes it more healthy same as rice and potatoes, it changes the carbs and the way they are digested. The healthier substitute for those noodles would be to use brown rice noodles. They are yummy plus they keep you feeling full. I found a fat free half and the half, reduced fat sharp cheddar cheese and Parmesan cheese. It is not healthy but it is less fat and still delicious. Cream and whole milk are swapped with broth (no calories) and low-fat milk. A lot of fat is cut out but yes, there’s still cheese because it’s Mac and cheese. The tiny amount of flour used to make the roux saves you from having to use heavier liquids. Everyone cheeseball. I like to take the hot cheese and put it in the blender with roasted cauliflower until smooth. Add a tablespoon of powdered milk (I use powdered goat milk but powdered cow milk works, too.) to offset the water in the vegetables.
